Smokin' Turkey Panini

I decided to try my hand at making my own panini recipe today.  My nephew, who I tested it on, thought it was tasty. So, I am sharing it with you.

We will call it Smokin Turkey Panini.

I used the following ingredience:
     Wheat Bread
     Deli Sliced Turkey
     Valida Onions
     Canned Mushrooms
     Mayo
     Mozzarella Cheese
     Smoked Applewood Rub by Pampered Chef (My favorite rub!)
Here are some of the tools I used as well as My Grill Pan and Press and Saute Pan.


I sliced the Vidala Onions on my Ultimate Mandolin on the thinnest slicing option.
I melted some butter in the saute pan and started them cooking. MMMM! I love Vidala Onions!

While those were cooking I shredded my cheese. A little helpful hint (I forgot to do) stick soft cheeses like mozzarella in the freezer for about  10 minutes before shredding for slicing and it will be easier to do.


 In a bowl, stir together about a half a cup of Mayo, a teaspoon of Rub and shredded cheese. When the onions are translucent ad the can of mushrooms, drained. and heat for a few minutes.

Now, to assemble your panini. Butter both top and bottom piece of bread. I put 2 slices of turkey lunchmeat, then the onion/mushroom mix and then the mayo/cheese mix. Put in your warm grill pan. Grill on each side for a few minutes. I was able to make 4 sandwiches.

Rainy day

Well, today is a rainy day. Which means I don't have a lot of drive to do anything around the house. But I will ...maybe.

I have definitely been not wanting to do my chores. Instead, I have been crocheting. And a little tatting. Of course, I have to practice my tatting. My tatting teacher is having me do a demo at a local museum over Memorial Day weekend. So, I need to practice ( Not that I would need an excuse to practice.)

Butterfly Purse

Finished Butterfly Purse


Cut out pattern

Mark spot on top-side of top part of wings
Sew along edge from one marked spot to other marked spot
Turn inside out and iron
Cut 2 6-10" strips for handles









(Length depends on size of butterfly)
























Fold over and sew (I used a zig-zag on the edge)
Iron while curving the felt 



Sew to top part of butterfly

Decorate as desired.



Enjoy this project. It was simple and easy to make.

Baking cookies

Yesterday, my aunt and I baked all day. We made lots and lots of cookies.

We started this tradition about 4 years ago when I was first married. See, 3 months after I got married we got hit by hurricane remnants. We got flooded out and ended up living with family for 4 months. Mostly lived with my aunt because she had a spare room.

Since we were there at Christmas we made cookies...now we make cookies every year. It is fun. Yesterday was no exception to that.

So now I have 4 big containers of cookies. Wow! His thing I want to giver some to my neighbors!

I love decorating cookies! I have posted some pics to show off my skills. [:,)

I NEED MORE TIME!

I can't believe Christmas is only a few weeks away. Where has the time gone?

I have so much to do! I haven't even had a chance to think much about getting Christmas decorations.

A few days ago, I quit my job (it was the end of June) and now it is December. I thought I would have more time when I quit my job but now it seems like time is moving even faster and I am not getting anything done I wanted to get done.

Oh well...let's set our goals...we can do it!

Over full

Why is it that we tend to over fill things. You know, the trash can, the washing machine, the sink, our stomachs. But when it comes to Jesus we just take what is necessary. We don't even fill up.

I always intend to spend more time with him, but stuff just gets in my way. Sleep, TV, reading, cleaning...I need to put Jesus at the front not the back.

I hope I can. Praying it through!

Best Buy Christmas commercials

I just have to vent!

These commercials are annoying. Seeing a "mother" challenging Santa does not inspire me to buy stuff at your store.

A mother should instill peace and love in her children at this time of year.  But being nasty just makes her seem like another back biting witch. Do we really need yet another example of nasty people?

I am not a big fan of Best Buy anyway. Most of the times I have gone into one of their stores I can't get anyone to help me. I know I am not the best looking woman out there, but I should still be treated with respect and not brushed side for another customer.

Anyway... I am done venting. Thanks for reading.
